Maple & Brown Sugar Porridge (with Black Garlic!)

INGREDIENTS:
3 cups water
1/4 teaspoon black garlic salt
1 cup hot cereal (we like Bob’s Red Mill 7 Grain Hot Cereal)
4-8 cloves black garlic, peeled and smashed into a thick puree (roughly 2-3 tablespoons)
2 tablespoons brown sugar
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
TOPPINGS IDEAS:
Consider a pat of butter, milk, raisins, chopped nuts, or an additional sprinkle of brown sugar
INSTRUCTIONS:
In a medium saucepan, bring water and salt to a boil.
Stir in cereal and reduce heat to maintain a low simmer. Add black garlic puree and stir until incorporated.
Cook over medium-low for ten minutes, stirring occasionally. Adjust heat as needed to prevent cereal from sticking to pan.
Remove from heat and stir in brown sugar, maple syrup, and vanilla extract. Portion into bowls, add toppings, and serve.
NOTES:
Any kind of hot cereal can be used, just be sure to adjust cook time and water amount to suit the specific kind accordingly.
Black garlic is created by cooking raw garlic low and slow for several days, until the cloves caramelize and turn black, soft, and sticky.
Unlike regular garlic that is known for its bite and pungency, black garlic has a complex umami sweetness similar to molasses, figs, or a syrupy balsamic vinegar reduction.
