Cardamom-Spiced Turnips with Tomatoes
Did you ever think you’d hear someone tell you that turnips could rock your world? Well, it’s true! These turnips are seasoned with cardamom, cayenne, Romesco Garlic Salt, and pepper, then cooked with tomatoes until softened. This simple recipe is a delicious explosion of flavor and we strongly suggest you try it while turnips are in season.
This amazing recipe comes to us from Megan’s friend Kanchan of the popular blog Spice Spicy Baby, who is also a creator at BuzzFeed Tasty, the woman behind the beautiful and informative Instagram account @chiefspicemama, and cookbook author. We’re sharing it here with you with Kanchan’s permission, although we did tweak the original recipe ever so slightly. Enjoy!

Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes
INGREDIENTS:
1 tablespoon avocado oil
1 teaspoon ground cardamom, plus more for garnishing
3 cups chopped Hakurei Salad Turnips
1 teaspoon Romesco Garlic Salt
freshly ground black pepper, to taste
1 15oz. can diced tomatoes, undrained
pinch or two cayenne, plus more for garnishing (optional)
1 cup chopped turnip greens, optional
1-2 tablespoons finely chopped cilantro, for garnishing
INSTRUCTIONS:
Heat oil in saucepan over medium heat. Once hot, add cardamom and sauté for about a minute, until fragrant.
Add turnips, salt and pepper and sauté for another minute. Pour in tomatoes and their juices, along with cayenne pepper, if using.
Cover and cook for about 10 minutes, stirring occasionally. Stir in turnip greens (if using) and cook for another 5 minutes, until turnips are softened to your liking. Sprinkle with more cardamom and cayenne and the cilantro. Serve hot.
NOTES:
Store-bought ground cardamom will definitely do, but if you want the swoon-worthy, aromatic flavor that is unique to this spice, we recommend buying cardamom pods. You can crack them open, remove the cardamom and grind it with a mortal and pestle each time you need ground cardamom. Heaven!
This dish makes a simple, flavorful side for any meal you like. You can also pair it with quinoa or couscous and a green veggie for a filling, plant-based power bowl.
