Green Pancakes

If you’ve been a reader of ours for any length of time, you know we love incorporating veggies into every meal of the day. That can look very different from day to day, and we’ve found these pancakes are a surefire winner to get our son excited about eating his greens.

This simple blender recipe comes together in minutes and it’s a wonderful way to get children involved in the kitchen. They can help dump all the ingredients into the blender and watch it all get blitzed together and turn a vivid green hue!

Picky Eater Tip: don’t try to hide the fact that there’s greens in the pancakes. Have your child(ren) help make the batter and talk about why you are adding the greens. When the pancakes are ready, encourage them to try a bite and ask if they can taste the greens (they won’t be able to).

Servings: 4 to 6

Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes

INGREDIENTS:

  • 1/2 cup milk of choice

  • 1 ripe banana

  • 1 teaspoon vanilla extract

  • 2 eggs

  • 2 tablespoons coconut oil, melted and cooled

  • 1-2 cups greens (try our Spinach or Power Greens Mix!)

  • 1 cup oat flour

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • pinch of himalayan salt

  • oil or butter, for greasing the skillet/griddle

INSTRUCTIONS:

  1. Combine all ingredients into a blender and blitz until smooth.

  2. Heat skillet or griddle over medium low and grease with oil or butter.

  3. Using a small measuring cup (we love our 1/8 cup for this), portion the batter onto the hot skillet/griddle, leaving about an inch between each pancake.

  4. Cook for about 3-4 minutes or until bubbles appear at the tops and the bottoms are golden. Carefully flip and cook 3-4 minutes more.

  5. Transfer pancakes to wire rack and keep warm in a 200F oven.

  6. Add more oil/butter to the skillet between batches and repeat steps 3 to 5, until batter is used up.

NOTES:

These pancakes freeze beautifully and we often double the batch to store some in the freezer.

Pancakes can be reheated (or thawed from frozen) in the toaster. This makes their edges a little crispy and super delicious.

These mini pancakes aren’t just for breakfast! Try using them to make little peanut butter and jelly sandwiches for fun lunches the kiddos will love!
