Power Greens Sunshine Smoothie

In our farmhouse, smoothies are a regular part of our diet. We just love how many fruits and veggies can be squeezed into a tiny, portable package.

Sometimes we enjoy thick, milkshake-like smoothies and other times we turn to smoothies like this, that offer a thinner, almost juice-like consistency. Packed full of fiber, vitamin C, and polyphenols, this smoothie is easy to drink and brightly flavored.

INGREDIENTS:

  • 2 cups cold, filtered water

  • 2 cups Power Greens Mix (kale, swiss chard, and spinach work too)

  • 1 large orange, peeled and quartered

  • 1 cup frozen mango

  • 1 frozen ripe banana, broken into chunks

INSTRUCTIONS:

  1. Add all ingredients to a blender and blitz until smooth.

NOTES

If you prefer your smoothie a touch sweeter, add a teaspoon or two of raw honey.

If you love smoothies and want to make them regularly, we suggest keeping a stash of ripe, peeled bananas in your freezer at all times. They create a creamy, nutritious, and sweet base for so many delicious smoothies.

If you do not have a high speed blender such as a Vitamix or Blendtec, consider blending the water and greens together first and then add the remaining ingredients and blend again.
