Chocolate Chip Cookie Bites (with Black Garlic!)

These no-bake cookie bites are made with healthful ingredients and even pack a surprising and immune-supporting punch … black garlic!

We’ve mentioned before that the sultry sweetness of black garlic actually pairs quite well with sweet foods, especially anything with chocolate (Exhibit A: our Black Garlic Hot Chocolate). These cookie bites are the perfect addition to a kid’s lunchbox or go well with a glass of milk for an after school snack. The black garlic flavor is very subtle here, but the phenomenal health benefits are not. Black garlic is chockfull of all kinds of goodness, including more bio-available allicin (the antioxidant powerhouse compound found in all garlic) and immune-boosting power.

Yield: approximately 15 1.5” diameter bites

INGREDIENTS:

  • 2 cups rolled oats

  • 2 tablespoons almond flour

  • 1 tablespoon cocoa powder

  • 1/4 teaspoon sea salt (double the black garlic fun with our Black Garlic Salt)

  • 1 bulb black garlic, peeled

  • 1/2 cup maple syrup

  • 1 cup natural peanut butter

  • 1/2 cup mini chocolate chips

INSTRUCTIONS:

  1. In a large bowl, combine oats, almond flour, cocoa powder and salt. Set aside.

  2. In a medium bowl, mash peeled black garlic cloves with a fork until a thick puree forms. Add maple syrup and whisk to combine. Add peanut butter and stir until incorporated.

  3. Scrape black garlic mixture into oat mixture. Add chocolate chips. Mix together, using your hands if necessary, to make a thick, somewhat sticky dough.

  4. Using your hands, roll dough into uniform balls. Store in refrigerator for longest shelf life.
